In the Kanto region, chrysanthemums bloom in the fall, while the flowers bloom in the spring, hence the name ``shungiku''. In Osaka, this chrysanthemum is called ``Kikuna'' because its leaves are eaten. The amount of shungiku produced in Osaka Prefecture is one of the highest in the country. There are various types, and in the Kanto region, medium-leaved varieties with thick leaves, deep notches at the edges, and erect stems are the mainstream. On the other hand, in Osaka, even with the same medium-leaved species, the ``stubbly'' type, in which the stems do not stand up even when grown, and the stems are stretched horizontally, has become established. Since it can be shipped with roots, it is easy to maintain freshness.
