Tsumura Honten, located in Matsubara City, Osaka Prefecture, handles everything from raising ducks to slaughtering, processing, and selling ducks. Founded in the early Meiji period. As farmers who raise ducks for consumption are being weeded out, this is a rare store that can be said to be the only specialty store left in the Kansai region. Yoshihiko Tsumura, the fifth generation owner, says, ``Ducks, as they are written, are originally ducks that have been improved into poultry.Over many years, the breed has been improved through repeated crossbreeding.''

It was Mr. Tsumura's great-grandfather who gave the name ``Aigamo'' to Aigamo and popularized it throughout the world. Ducks are originally birds that fly and move from one habitat to another. Therefore, they have strong antibodies and are less likely to get sick. ``We don't have to administer antibiotics like we do with chicken, so they can be eaten with peace of mind,'' says Tsumura. Furthermore, Tsumura says, ``The traditional method of feeding birds without pesticides and raising them free-range in a well-ventilated environment is ultimately the best way to raise birds and provide safe meat.''
